做拉面做饺子皮是不能加酵母的,加了酵母的面团再做拉面或饺子皮就失去了面的劲道,甚至还会“烂锅”,即拉面或面皮变得松软、没嚼头、面汤也会变糊。当然做拉面或做饺子面皮可加点盐或鸡蛋,既滑溜又劲道,只有蒸馍或烙发面饼的时候需要加酵母,这样的馍或烙饼会更虚,更松软,好吃。

做拉面醒面一般半个小时左右。一般表面会发生一定的色泽变化,醒好的面表面会很润和匀。其实做饭时把面先活好,放在案板上或盆里,上面遮盖一下。然后在择菜、洗菜、做菜、等菜好了,就差不多了吧。
