1、配料比例:青辣椒5公斤,食盐0.75公斤,大茴香(八角)12克,花椒15克,姜50克,水1.25升。

2、加工方法:将新鲜的辣椒洗净、晾干、扎眼。然后放入干净的容器内。将调料投入水中煮沸10分钟,晾凉后倒入盛辣椒的容器中。适时搅拌,15~20天即成。

3、成品特点:色泽绿,味咸辣。
