豉油皇咸肉怎么做

1、主料:咸肉350克、小葱叶30克、去皮嫩姜30克、鲜红尖椒肉30克、菜甫10克。

2、将猪五花肉的皮刮洗干净,改成大块,在肉面上切两刀至2/3处,入锅煮至刚熟约30分钟,用竹筷刚好插透),捞出沥净水分。将一大托盘擦净,垫入两三支竹筷(起透气作用)撒上一层盐,将煮好的肉皮朝下,放入垫好的盘内,撒上一层盐,盖严,放在架子上晾凉,制成咸肉备用。

3、将咸肉350克带皮切5厘米长、3厘米宽、0.3厘米厚的片;配料切5厘米长的细丝,用清水冲洗一下,使葱叶丝打卷,一起搌干水分入盘围边。将美极牌鲜酱油、老抽酱油、鱼露、绍酒、白糖、味精、胡椒粉、香油入碗,调成碗汁待用。

4、锅中入水烧开,将咸肉片飞水,入漏勺。锅炙好,入花生油,烧至六成热,下入飞水后的咸肉片拉油,待水分散尽,肉中油吐尽,肉已拉透至酥软,下入漏勺沥尽油。锅回火上,下入肉片,淋入碗汁,以余油旺火爆匀,待汁已吸入肉内,水分已散,盛入围好的盘中即可。
