1、方法一:将西红柿洗净、擦干,放入白酒中洗过;放入坛中,一层西红柿一层盐;这样一层层的到坛满,密封待西红柿发酵好后备用;注意不能太满,不然西红柿发酵后会膨胀;用时将西红柿过油加入米汤、佐料即可。

2、方法二:西红柿洗净捣烂,放入大的器皿(洗净不粘油)里;加入散装白酒、盐少许;密封保管45天发哮即可食用 (切忌不能粘油)。
