1、炸之前,要先把大块的肉放水煮透,然后用牙签或其他尖的东西,在皮上扎好多洞,洞越密,对后面的油炸越有用。一定时间后,把肉块晾干,热好油锅,切忌小心,别沾到水。油热之后,用东西勾住肉块,放皮的那面到油锅炸,另外油温也非常的重要,炸扣肉一般油温要烧到9成热,然后小火炸至金黄即可。

2、扣肉所用的肉要用浓度大一点的蜂蜜水,或者麦芽糖,沾到肉皮的表面,然后放入高油温的油锅里,快速盖上锅盖,小心溅出热油烫伤,颜色合适即可,回锅到原汤里煮开,起锅浸泡,这样出来的泡多又均匀,口感更美。选择肉皮厚点的五花为原料,肉要煮熟皮要煮沸,这样的扣肉才会比较软,肉皮炸到色红起泡时捞出放入温水中浸一下即可。
