鳝鱼米线的制作方法

1、用猪大骨熬汤备用。

2、香菜切段,薄荷洗净,葱切碎成葱花,韭菜切段烫熟备用;猪泡皮用水发开备用,鳝鱼宰杀后切三厘米左右小段备用。

3、炒锅放适量底油,油热后先放入蒜泥和姜末炒香,之后加入鳝鱼片大火炒熟,再依次加入辣椒面、草果面、八角、昭通酱炒香,之后在倒入适量猪骨汤、猪泡皮、盐、料酒、酱油、味精后用大火收水,待汤成浓汁后即可起锅成“鳝鱼帽子”。

4、米线用开水烫熟(一两分钟即可)后大碗盛起,舀入滚烫的猪骨汤,浇上“鳝鱼帽子”,放上香菜、薄荷、葱花、韭菜、油辣椒、花椒油、大蒜油等佐料一碗地道的云南美食鳝鱼米线就大功告成了。
