淡奶油打不发可能是因为周围温度高或者是被冻坏了。通常在打发奶油之前最好将它的温度控制在10℃以下7℃以上,并且天热时打发要隔着冰块。而且淡奶油不能放在冷冻层保存。

所以,尽量选择乳脂含量比较高的淡奶油,这样比较容易打发。打发淡奶油要使用冷藏12小时以上的淡奶油,在天气炎热时,打发奶油还需要准备一盆冰水,垫在装有淡奶油的打蛋盆下方。
