1、主料:猪上肉500克,酸菜100克,鲍汁适量。

2、调料:(1)糖,酱油,花雕酒,蒜末各适量。(2)糖,白醋各适量。

3、猪上肉上火烤至皮色焦黑,洗净,切小块。取一大锅,放入调料(1),烧至酥烂。

4、酸菜切粒,加调料(2)浸泡1小时,入锅炒干水分。

5、酸菜垫底,放入猪肉块,上蒸笼蒸透,淋上鲍汁即可。
