卤香鸭下巴制作步骤

1、主料:速冻鸭下巴10只。

2、调料:粤式卤水1000克,玫瑰露酒10克,麻油5克。

3、将鸭下巴解冻,再用温水浸泡12小时,期间换2~3次水,去舌衣和喉部瘀血,冲洗干净。

4、锅内放入清水烧热,放入鸭下巴,加热至沸烫透,捞出沥干。

5、将卤水煮沸,放入玫瑰露酒、鸭下巴,再沸,收慢火煮10分钟,然后熄火浸15分钟,取出,上碟,淋上卤汁和麻油便成。稔滑、卤香,宜佐酒,色泽黄亮,酥烂。
