鲜猪肚腌制方法

1、把猪肚洗净、去除猪肚上面油脂。油脂可以用刀片去刮干净,然后加入食用盐,淀粉用手去抓,持续10分钟后,加入姜片、绍酒、葱、陈皮腌制30分钟即可。

2、大葱洗净切段;生姜洗净,部分去皮拍松,部分切末备用;将猪肚反复用清水洗净;青、红辣椒洗净切丝;

3、烧开水,把猪肚氽一下,呈白色时捞出刮洗干净,除去油脂;

4、洗净锅,再加水烧开,放入猪肚、葱段、姜块、辣椒、大料、花椒、料酒,大火烧开后撇去浮沫,改用小火煮;

5、约1小时后取出猪肚晾凉,切成丝装盘,然后放入辣椒丝;

6、将精盐、味精、香醋、香油调匀,淋在肚丝和辣椒丝上,撒上姜末即可。
