熏大鹅

1、宰杀:在鹅的左侧或右侧下颌骨半厘米处,拔去细毛,割一小口。然后紧握鹅的鼻孔和嘴,不让其呼吸,几分钟后即血尽而亡。宰杀后,必须在5分钟内用60-65℃的水烫毛。去掉粗毛后,将鹅放入冷水中浸洗,拔净细毛。

2、煮制:切开净鹅的胸腔,除去内脏,切成6~8片。然后放在锅内,加适量盐与水,放入少许五香粉、生姜片、葱等配料,加盖,煮至鹅肉基本熟烂,取出沥去水分。

3、重制:将锅里的汁水倒出,擦洗干净,在锅内放一张白纸,纸上放茶叶30克、白糖或红糖50克。上置一铝制蒸格,将鹅肉均匀地放在蒸格上,盖上锅盖烧火。火势以慢火,文火为好。约15分钟左右,打开锅盖检查一下,看鹅是否已经全部熏黄。如有熏不到的地方,可翻一下继续熏,一直到鹅肉表面全部熏黄,即可取出食用。
