2、炖肉最关键的在于火候,对温度和时间把握准缺,才能做出一锅酥而不烂、回味无穷的肉。炖肉在开始时,要用旺火。煮开以后则要以微火为主了。其道理与炖肉不宜用冷水是一样的,为的是使肉块表面的蛋白质迅速凝固。如果炖肉用旺火,则必然大开大滚,肉中呈香味物质挥发性很强,必然会随之跑掉,促使肉中的蛋白质加热变性而变硬,不溶于水。此时肉中的含氮物质必然释放得也就少。而且肉中的肌纤维也不容易煮烂,因此,炖肉以微火为佳。
