肠粉米浆配制方法:

1、粘米粉1斤,2两粟粉,2两生粉,1两澄面水约4斤,盐,油各少许,一起拌匀,不能结块,水分次加入即可。

2、在多层蒸格或棉布上,放上猪肉,鱼片,虾仁,牛肉,或叉烧等馅料,斋料也可,蒸熟后卷成长条,切段装碟,一般切3段.浇上肠粉豉油汁即可食用.豉油配制:生抽1斤,老抽3两,冰糖5两,盐1钱,味精3钱,鸡粉5钱,美极酱油1两,香菜水约1.7斤[香菜,虾米,八角,红萝卜,花椒,香叶,姜,干葱头熬水]。

拉肠粉秘籍:

肠粉浆淋在棉布上,蒸熟后取出,铺在刷有花生油的抬面上,以大理石板为好,接着一手牵住棉布的一角,一手执无口的薄片刀刮下黏住的部位,这样边拉边刮直至拉出一张宽约20厘米,长约30厘米的完整薄片。
