姜丝鳝鱼

1、主料:鳝鱼250克。辅料:子姜100克,鸡蛋清30克。调料:香油15克,盐3克,酱油15克,味精1克,料酒15克,淀粉(玉米)15克。

2、将用击昏剔骨法宰杀的鳝鱼的鳝片肉放在案板上,剥去外皮,再放入清水盆漂洗至肉色洁白,沥干水;

3、鳝鱼改刀切成长一厘米粗厘米的细丝,放在碗内;

4、碗内加盐味精料酒淀粉鸡蛋清拌匀上浆;

5、嫩姜芽洗净,刮掉外皮,也切成细丝,先放入清水碗内略泡,捞出沥干水;

6、然后放入漏勺,在沸水锅内焯烫,边烫边颠翻,使之均匀受热,去掉生味,溢出香味,并使之脆嫩,捞出后用干洁布吸去浮水,放在盘内的垫底;

7、将锅置于火上,放入清水烧开;

8、把浆好的鳝鱼丝倒入锅内,用筷子轻轻地不断拨动焯烫,待水再开时即可捞出;

9、然后用干洁布吸去浮水,倒在盘内的姜丝上面浇入酱油香油和味精调成的味汁,再将鱼丝姜丝拌匀拨松,即可食用。
