油泡马鞍鳝怎么做

1、主要材料:起净黄鳝肉500克,蒜头肉30克,红辣椒少量,鱼露10克,味精5克,麻油5克,上汤75克,湿生粉40克,真珠花菜(鸭掌菜)50克,绍酒15克。

2、先将黄鳝肉用刀花成球状,每块约6厘米长,用碟盛起候用。

3、蒜头肉剁幼,用碗盛起,红辣椒剁幼,用碟另放。

4、真珠花菜洗干净,起镬下油把真珠花菜炸至碧绿脆香,捞起落碟候用。油倒回油盆,顺镬把蒜头茸炒香至金黄色。要注意火候,如蒜头不够色就不够香,如过火就带苦,蒜头炒至金黄色时用碗盛起。倒干碗内的油,然后加入鱼露、味精、红辣椒、麻油、上汤、湿生粉15克(3钱)调成碗芡候用。

5、起镬下油,黄鳝肉加入湿生粉25克(5钱)拌匀,下油镬走油,在黄鳝8成熟时用笊篱捞起,等油温烧高一些,再把黄鳝倒回油里略炸立即倒回笊篱。铲干净镬里的油,后把黄鳝倒回镬里,溅绍酒抛镬,加入调好的碗芡,抛匀落碟,碟边伴炸香的真珠花菜即成。
