双母蒸甲鱼

1、原料:甲鱼1只(600克)、贝母8克,知母8克,前胡8克,银柴胡8克,杏仁8克,姜块15克,葱结20克,白糖5克,味精1克,花椒12粒,绍酒20克,精盐6克。

2、将甲鱼放于案板上,腹部朝天,等头伸出时用刀宰去三分之二,放尽血,人开水中煮约10分钟捞起。

3、用小刀将甲鱼周围的裙边、腹部软皮与四周粗皮刮洗干净,再人开水中煮15分钟。

4、剥去甲壳和内脏,用清水洗净,切去脚爪,横切成6立方厘米的方块,再入开水中煮几分钟,去其腥味捞起。

5、将中药洗净,切成薄片,煎取浓汁,与甲鱼块放人蒸碗内,加姜片、葱结、花椒、绍酒、盐、白糖,人蒸笼内蒸熟烂,入味精调味食用。
