油炸鸭的正确方法

1、将鸭子放入沸水氽一下,捞起用凉水洗净,退净细毛。鸭背部开刀,斩下头颈,用葱结、姜丝蘸上拌匀的绍酒、精盐20克;

2、将鸭身擦干,然后同葱姜一起放入锅内,加酱油、白糖上笼屉用旺火蒸酥取出,去掉葱姜。将鸭拆骨,斩断翅膀,劈开鸭头待用。鸡蛋磕入碗内打散,加湿淀粉、味精、面粉和盐2克、水50克调成蛋糊,先取1/3平铺盘内/将鸭子肉平铺在蛋糊上,再盖上1/3的蛋糊。锅置旺火上烧热下油,至六成热(约150℃)时,将挂糊的鸭肉入锅炸至老黄色,捞出;

3、将翅膀、鸭头、颈及拆下的骨涂上氽下的蛋糊下锅炸熟捞出,鸭骨放盘中垫底。将鸭身肉切成3大条,旁边的两条批成小片条。装在腰盘的两侧;

4、再将中间的一条切成1.7厘米宽的片条,装在中间排迭成桥拱形,翅膀列于两边,鸭头两片平放前端,成整鸭一样。香菜放盘边小上席时,带花椒盐、甜面酱。
