如何做乌橄榄菜

橄榄菜是广东潮汕地区特色风味小菜,能开胃消食,增加食欲,潮汕人喝白粥最爱搭配橄榄菜,“过杀嘴”(潮汕话)。

1.青橄榄先用水煮10分钟后沥水去核备用;

2.咸菜洗干净后沥水,切约0.2cm长的小段备用;

3.把做法1和做法2的材料加少许水一起放进高压锅煮十五分钟,等蒸汽自然消失后开锅,把材料沥水备用,沥出来的水留用;

4.大锅放植物油加热(油放多点),把做法3的食材和花生碎放进去炒均后,加入留用的水慢火熬,并不时翻拌加水,熬至烂熟,取少许尝试,如不够咸再加少许盐。最后再加入少许糖稍微熬一下即可熄火。

5.放凉后装瓶,食用。
