烧烤卤油制作方法

1、大葱拍破后切段,生姜、芹菜均拍破,洋葱切块待用。

2、锅入菜油烧至九成热,陆续放入大葱、生姜、洋葱和芹菜炸至金黄色时,打去料渣不用,等到油温降至五六成热时,再把热油舀入装有糍粑辣椒的不锈钢桶里搅匀,放置两三天后打去桶里的糍粑辣椒,即成卤油半成品。

3、把剩余的香料放入沸水锅里煮约6分钟,捞出沥水。锅入半成品卤油上火烧至四成热时,下入煮过的香料,开小火慢慢提炼出香味后,离火浸泡2天,打去香料渣子,即得卤油。
