干烧鱼翅怎么做

1、主料:水发鱼翅300克,鸡肉50克,鸭肉50克,猪肉50克。火腿30克,黄秧白菜心50克。熟猪油30克,鸡汤250克,料酒35克,红酱油10克,盐2克,姜,葱各10克。

2、鱼翅涨发后,去尽杂质、放入蒸碗内,加注清水淹没,上笼用旺火蒸约40分钟,出笼滤干水(或入锅内反复出水三四次),放入有鸡汤、料酒的锅中小火煮5至10分钟捞起,用净纱布包好待用。

3、鸡、鸭、猪肉、火腿切成厚片(以上各料只取其味),入烧好的猪油锅中煸炒,然后加入料酒、红酱油、盐、葱、姜和汤再放入鱼翅包,在旺火上略烧后,移至小火上煨至鱼翅肥、汤汁浓。

4、取出鱼翅包,去掉纱布,用汤筛将汤汁滤入锅中,再下鱼翅小火收汁、同时另置炒锅将洗净的黄秧白菜心偏炒至刚熟起锅,铺于盘底(或圆盘内围成一圆圈),鱼翅起锅舀于盘中即成。
