豉香辣炒蛤蜊

1、食材明细:鲜蛤两斤、花生油适量、川南豆豉10克、干辣椒4个、花椒少许、豆瓣一勺、盐适量、味精极少许。

2、蛤喇洗净,沥水待用。

3、辣椒剪成细丝。川南豆豉备好。若是用永川豆豉,因为结块,则需要要用刀切小一下。

4、锅里放油烧热,加入豆豉煵香,然后放入辣椒丝、花椒。

5、辣椒变色后加入自制豆瓣(或郫县豆瓣)炒出红油。

6、倒入蛤喇翻炒均匀后,加适量盐,转中小火加盖焖煮。直至蛤喇开壳。

7、过程中适当翻炒两次。

8、成品麻辣鲜香,豉香浓郁。
