正宗酱猪肚制作方法

1、材料:原科猪肚1个(重750克)。调料酱油90克,料酒60克,大蒜5克,姜片10克,葱段5克,精盐6克,香料包1个(内装胡椒、花椒、桂皮、八角、砂仁各克,小茴香、丁香各2克)。

2、做法:猪肚用盐、醋搓洗干净,用温水投洗2-3次。将猪肚放入沸水锅内焯透,捞出投凉。锅内加适量清水,加入所有调味料和香料包,烧开煮20分种, 即成酱汤。将猪肚放入酱汤中,中火烧开,撇净浮沫,转为小火酱熟即可。食用时切条装盘。
