定南酸酒鸭的做法和配方

1、要选取当地饲养的瘦肉型菜鸭(俗称“火鸭”),杀后净毛清膛洗净。

2、将鸭子放入锅里隔水蒸或煮熟,但不得蒸煮太久,以保其色、香、味俱全。

3、起锅后,将熟鸭切成块状,摆放于盘中。

4、将准备好的姜末、辣椒末、大蒜末、食盐和当地盛产的纯正糯米酸酒等佐料放之碗中(俗称酸辣碗)搅拌均匀,随鸭肉一并上席。

5、吃法:可将鸭肉粘着佐料吃,也可把佐料直接倒入盘中拌随鸭肉一起吃。若能与定南客家碱性糕点:灰水粄(bǎn)、鸭蛋汤皮骨等同时食用,就更为一绝,谓之酸碱平衡,有利健康。
