红烧龙利鱼做法步骤

1、主料:龙利鱼、西兰花;辅料:蒜、干葱头、海鲜酱、老抽、玉米粉、料酒。

2、做法:(1)龙利鱼柳常温解冻并用厨房纸吸干水份,切块,用盐和黑椒粒腌制半小时;西兰花洗净切朵去茎备用;干葱头、蒜头去皮切片备用。

(2)热锅下油七成热,转小火,把鱼片放锅里煎,转中火,这时别翻动鱼柳,可适时转动锅让其受热均匀;这时汤锅放少量水烧开准备煮西兰花。

(3)待通透的肉色变白后,关火凉半分钟,把鱼小心翻动,煎另一面,煎好的一面会呈金黄色;汤锅水开后,放入几滴花生油和少许盐,倒入西兰花,搅动几下,别盖锅盖。

(4)鱼片侧面看全变白色,且两面都呈金黄色时,倒入少量热水,放入少许海鲜酱提味,把干葱片,蒜片也一起倒入,滴几滴老抽上色,再滴少许料酒,盖上锅盖小火煮三分钟左右。把鱼片装盘,玉米粉加水调成的稀糊倒入锅内收汁,倒在鱼面上。煮好的西兰花摆在鱼的周围一圈。
