1、材料:猪五花肉350克、鸡蛋2只、湿淀粉30克、料酒10克、精盐2.5克、味精2克、鲜汤100克、黑鹿角菜10克、香菜段10克、葱姜各20克、酱油10克、胡椒粉1克、醋2克、香油10克。

2、将五花肉去皮,两面剞上花刀,再改成2.5厘米长、1.5厘米宽、0.8厘米厚的块;

3、将鸡蛋、湿淀粉调成糊,把鹿角菜泡洗净,切成丝,葱、姜10克切丝,另10克切块并拍松;

4、炒勺上火,加宽油烧七成热,将肉块挂匀蛋糊,下入油中,炸成金黄色时捞出,盛入汤碗内,加酱油、料酒、鲜汤、葱、姜块上屉蒸透,约20分钟取出;

5、拣出葱、姜,汤汁沥入炒勺内,将肉扣在汤盘内;

6、炒勺上火,加入鹿角菜、精盐烧开,撇去浮沫,再将香菜段、葱丝姜丝撒在酥肉上,炒勺内汤汁加入味精、醋、香油、胡椒粉,浇在酥肉上即可。
