家庭自制清蒸桂鱼

1、主料:鳜鱼750克、火腿15克、冬笋30克、香菇(鲜)25克、猪油(板油)10克、姜10克、小葱15克、盐4克、味精3克、黄酒20克、醋10克。

2、将桂鱼剖洗净,放沸水锅中烫一下捞出,用刀轻轻刮去鱼身上的粘液;

3、把刮净粘液的鱼平放在砧板上,用刀贴着背脊骨从头下至尾部剞一刀,翻身,在身体朝上一侧剞十字花刀(或深剞斜刀片至骨);

4、熟火腿切片;

5、冬笋削皮,洗净,入沸水焯熟,切片;

6、香菇去蒂,洗净;

7、猪板油洗净,切丁;

8、桂鱼刀面朝上放入大腰盘内,依次将笋片、香菇、板油丁、火腿片相间放在鱼身上,加黄酒、精盐、姜片、葱结,上笼用旺火蒸15分钟至熟;

9、出笼后拣去葱、姜,原汁滗入小碗另用;

10、原汁汤放入葱段、味精和清汤50毫升,调准口味,煮沸后淋浇在鱼身上即可,上席外带姜末醋蘸食。
