甘草仔姜制作方法

1、配方:鲜生姜100公斤,甘草粉0.2公斤,食盐5公斤。

2、原料处理。将生姜用竹片或不锈钢刀刮去皮层,洗净,沥干。

3、腌制。用食盐分层入缸腌制,次日翻缸一次,3天后即可捞出。

4、晾干。将腌好的姜放入竹席上晾晒,第二天拌上甘草粉,继续晾晒,晒至原重的45%左右,即成甘草姜。
