1、北京填鸭1只(约2千克)。调料:A料(豆豉20克,宜宾芽菜50克,鹃城牌郫县豆瓣30克,小葱25克,花椒10克),香料35克,脆皮水500克。

2、北京填鸭治净,放A料腌制1天,吹气,挂脆皮水,风干,入燃气烤鸭炉以220度烤制45分钟,取净鸭肉斩成条,装碗备用。

3、将鸭架子、鸭头、鸭颈香料及清水2干克熬煮40分钟,与鸭肚子中掏出的A料继续熬煮10分钟,过滤,浇灌入汤碗中即成。
