1、烘焙粉就是泡打粉又称『泡大粉』或『蛋糕发粉』,简称B.P,是西点膨大剂的一种,经常用于蛋糕及西饼的制作。

2、泡打粉虽然有小苏打粉的成分,但是是经过精密检测后加入酸性粉(如塔塔粉)来平衡它的酸碱度,所以,基本上,虽然小苏打粉是带碱物质,但是市售的泡打粉却是中性粉,因此,小苏打粉和泡打粉是不能任意替换的。
