话梅的制作方法

配料:鲜梅果250千克、甘草2千克、砂糖3千克、糖精180克、香草油20毫升。具体做法:

1、选择成熟度为8至9成的新鲜果实;

2、每250千克鲜梅果加入食盐45千克,一层梅果一层盐入缸盐渍,约需25天左右;

3、咸梅坯放入清水浸泡漂洗,待盐分脱去50%左右,即可捞出,再用清水冲净;

4、将经过漂洗的梅坯均匀铺在晒场上,在阳光下曝晒,每天早晨摊开晾晒,日落即可收回堆放。待完全干燥后,用筛子筛去杂物,入缸备用;

5、将甘草捣碎成渣,入锅煎煮。所得头水放在一旁备用,再煎得二水倒入梅坯中,盖盖闷2小时左右即可捞出;

6、将捞出的海坯沥去余水,摊放在竹屉中,然后将头次所得甘草水加入砂糖和糖精,溶化均匀,与梅坯拌和均匀。再将梅坯置于阳光下曝晒至干燥时为止;

7、待梅坯晒至将干时,可把香草油喷洒在梅坯上;

8、装制成的话梅分装于塑料薄膜食品袋即可。
