手工面条(手擀面),和面时加入少许碱是为了“滑”,加入少许盐是为了“劲道”。手工鸡蛋面,由于加入了鸡蛋,就增加了劲道、爽滑的口感,不必放碱和盐了。

和面加碱:

1、 食碱能收敛面筋质,使面团弹性增大。

2、 碱可促进淀粉的熟化,提高面条的复水性,增进面条的口感,碱能加速淀粉形成凝胶,增加面粉的粘度值。

3、发面里面含有乳酸菌,乳酸菌发酵后会产生酸,所以要用碱来中和。
