1、盐水浸腌:制作时将新鲜鸭蛋洗净,于阳光下晒至壳干;另用水适量加盐煮沸、待凉,水量以浸没蛋面为度,盐量基本上是5kg鸭蛋用1kg盐,将鸭蛋在60度白酒中滚沾一下后排放甏中,待排罢,倒入盐水,加盖于阴凉处腌制30天以上。

2、辣糊盐腌:鸭蛋洗净、晾干,滚一层辣椒糊(上海俗称辣火),再滚沾满精盐,排放甏中,加盖于阴凉处30天后可食用。

3、白酒盐腌:鸭蛋洗净晾干,于60度白酒中滚沾一下,再滚沾满精盐,逐只排放甏中。排罢,蛋面撒上一薄层精盐,加盖于阴凉处腌40天。

4、辣糊酒盐腌:鸭蛋洗净、晾干,先在60度白酒中滚沾一下,再滚沾满一层辣糊,然后滚沾上精盐排放于甏内,加盖于阴凉处腌30天以上。
