煲猪肚汤的做法大全

1、莲子猪肚汤。材料:猪肚1具、去心莲子40颗。调料:花生油适量,盐、姜丝、鸡精各少许。做法:将姜去除外皮,用清水洗净,切成丝。将莲子煮熟,装入洗净的猪肚内,用线缝合开口,放入锅中隔水蒸至肚熟,取出晾凉。将猪肚切块,用花生油加姜丝煸炒,最后加盐和鸡精调味即可。

2、芡实猪肚汤。材料:猪肚1个,芡实30克,莲子30克,红枣10个。做法:把猪肚翻转洗净,放入锅内,加清水适量,煮沸后捞起,去水,用刀轻刮净。芡实、红枣(去核)洗净,莲子(去心)用清水浸1小时,捞起,一齐放入猪肚内。把猪肚放入锅内,加清水适量,武火煮沸后,文火煲2小时,调味供用。

3、清炖猪肚汤。材料:猪肚150克。调料:芝麻油1克,熟猪油20克,味精2克,精盐3克,葱10克,姜2克,碱灰适量。做法:将猪肚用碱灰和芝麻油混合搓5分钟,搓出粘液后用清水洗涤3~4遍,洗净后放入器皿中高火20分钟,捞出,再用清水冲洗干净,切成3厘米长、2厘米厚的片;葱切段,姜拍破待用。器皿中放入猪油、葱、姜,高火1分钟,再加入肚片、盐,加足清水,中高火40分钟煮至肚烂,放入味精即可。
