1、材料:鲜牛肉500克、食盐40克、味粉4克、冷水100克、粉30克。

2、将鲜牛肉切片状,用环形小铁槌捶烂,有冷水、食盐、菱粉翻拌,弄成牛羊肉胶,用力将牛羊肉胶揉成丸形,放入锅中,加冷水,用慢火浸熟水清,丸浮不面为标准取起,焖、炒等咸宜。这类作法要留意,牛羊肉务必新鮮,不然沒有胶原纤维,捶不烂也易出水量,做成的肉丸便不滑爽。
