1、蒸鸡蛋时最好使用大约45度左右的温水,也就是手感觉到热但并不怎么烫手时,这个温度就刚刚好是45度左右。

2、要注意,在蒸鸡蛋的时候,不能用冷水,这样鸡蛋蒸不凝固的,蒸好了还是水一样很散,用冷水做的蛋不够嫩滑,而太热的水又容易把蛋液烫成蛋花。
