面包放久了会发硬是因为淀粉的老化,冷却后已经糊化的淀粉分子,互相之间会有规律地自动定向排列,从而形成一种质地坚硬的结晶。其淀粉分子排列整齐,含水量也较少,这样的状态也就是淀粉老化。在淀粉粒中,淀粉分子彼此排列得非常紧密,它们在羟基间通过氢键形成极致密的疏水性微胶粒构造,这种状态的淀粉被称为β-淀粉。β-淀粉与酶不易发生反应,从而难于消化。
