粉蒸鸡的制作方法

1、原料:仔鸡400克,红米粉150克,酱油10克、料酒10克、白糖2克、味精3克、胡椒粉3克、姜米5克。

2、将鸡肉切成1寸左右长的厚片,和甜面酱,豆瓣酱,糖,酱油,葱,姜末,黄酒,胡椒,酒酿露等调味拌和。

3、另将大米炒至黄色,加花椒一起炒,磨成末,再加猪油,麻油,同鸡片调拌均匀后放在碗中,再把熟豌豆拌上米粉和花椒粉,加少许盐,放在碗上面,上笼蒸熟,翻扣在盘中上。
