油酥饼烧的做法

1、取面粉1/3,加油拌匀、揉透,制成酥面;

2、其余面粉加沸水110毫升,搅拌搓散成雪花状的片,摊开冷却;

3、冷却后,甩上冷水15毫升左右,加油,拌揉至柔软光滑,调制成水油面;

4、油酥面、水油面两块面团各摘成10个剂子;

5、取水油面剂1个,按扁圆形,裹入酥面剂子1个,包拢后擀成长片,从一端卷拢,再按扁擀成长片,再从一端卷拢,顺势搓成粗细均匀的长条,再擀成宽约3厘米的长片,顺长卷拢,对剖成2只圆饼,刀纹面朝上,用面杖擀成直径约8匣米的圆形酥油饼坯,按此法将全部饼坯擀制好;

6、锅内放油,用旺火烧到六成热时,将锅端离火,用手勺搅动使油面旋转,然后将饼坯分批投入(每锅炸5只左右为宜);

7、将锅置中火上,油面继续用手勺轻轻推旋,以防油饼焦底;

8、待油饼炸至浮起,两面成玉白色时,即捞起沥尽油,装盘;

9、每只酥油饼放上绵白糖、青梅末、糖桂花少许及玫瑰花瓣碎片即可。
