1、配方:清水4000克,红花椒5克,白芷2克,香叶3克,八角5克,黄栀子5克,山楂片5片,葱段适量,姜片适量,花雕酒适量,鸡精10克,味精10克,鸡粉10克,浓缩鸡汁10克,泡野山椒段50克,藤椒油30克,食盐65克。

2、盐卤的做法配方:清水10斤,泡菜盐约4斤,葱段38克,姜片38克,香料包1包。锅里加入清水一边加热,一边加入盐搅拌。直至水上面有一层盐末,水底还有一层盐没有融化就可以关火了,下入葱段,姜片和香料包,我们用这个余温就可以将香料包里面的香味和蔬香料的香味融合出来。
