平南扣肉做法和配方

1、主料:猪肋条肉(五花肉)500克。

2、辅料:酸白菜150克。

3、调料:盐3克,小葱10克,姜5克,酱油15克,醋10克,豆瓣酱25克,甜面酱25克,江米酒15克,鸡精2克。

4、香葱、姜洗净,切成段和片;

5、将带皮五花肉放入锅中,焯后捞入盘内;

6、在内皮上抹酱油、甜面酱,用米酒腌制入味;

7、坐锅点火倒油,油温七成热时,将五花肉带皮的一面朝下炸一下,捞出晾凉切成片,放在器皿中待用;

8、锅再点火放油,油热后放入姜片、葱段、豆瓣酱、盐酸菜、米酒、精盐、鸡精、酱油翻炒均匀;

9、倒入装有五花肉的器皿中,放到蒸锅中蒸50分钟,取出扣在盘中即可。
