煎鸡蛋老粘锅是由于锅的表面,有很细小的但又很密的划痕,当煎蛋时焦化的蛋白等物质会和划痕发生粘连,如果锅的表面很光滑或者油足够多,蛋白接触不到锅子,就不再粘锅了。煎鸡蛋时注意不要油烧到温度很高的时候放入鸡蛋,否则很容易把鸡蛋煎糊,热锅冷油就能避免这个问题,而且放入油后放点盐也可以避免这个问题。
