竹笋烧肉的做法

1、原料:猪五花肉500克,干竹笋25克。

2、调料:精盐25克,冰糖(或白糖)100克,鲜汤800克,色拉油50克(实耗10)克,大葱白粒8克,香菜叶1片。

3、制作:将干竹笋用冷水浸泡24小时至软透,改刀成菱形节,在沸水大火煮3分钟后取出透凉;冰糖(或白糖)放入锅中小火炒成糖色。猪五花肉切成1厘米见方的丁,下五成热油锅中,中火煸炒5分钟至炒出五花肉的肥油溢出后加鲜汤、糖色、干竹笋,调入精盐烧沸后改小火烧煮约10分钟,下葱粒装入竹筒形的陶器中用香菜点缀即可。
