蒸肉做法

1、主料:猪肋条肉(五花肉)500克、莲藕250克。辅料:稻米75克。调料:甜面酱20克、白砂糖3克、胡椒粉1克、黄酒10克、桂皮3克、八角2克、小葱5克、丁香2克、姜2克、盐4克、味精2克、酱油15克、腐乳汁20克。

2、将猪肉切成4厘米长,2.5厘米宽,1厘米厚的长条,用布搌干水分盛钵中;

3、搌干水分的猪肉加精盐、酱油、甜面酱、腐乳汁、姜末、黄酒、味精、白糖一起拌匀,腌渍5分钟;

4、将稻米下铁锅中置微火上炒5分钟,至成黄色时,加桂皮、丁香、八角再炒3分钟起锅;

5、炒好的稻米磨成鱼籽大小的粉粒,制成五香米粉;

6、老藕刮洗干净,去掉藕节,切成3厘米长、1厘米粗的条;

7、藕条内加精盐、五香粉25克拌匀,放入钵内入味;

8、将腌渍好的猪肉用五香粉再拌匀;

9、将拌匀的五香粉的猪肉,皮贴碗底,整齐地码在碗内,两边镶肉条;

10、盛猪肉的碗与盛藕的钵一起放入笼屉内,用旺火蒸1小时取出;

11、先将蒸藕放入盘内垫底,然后将蒸肉翻扣在藕上,撒入胡椒粉、葱花即成。
