烧白肉全皮起皱如何做

1、调料:大葱15克、姜15克、料酒15克、酱油20克、盐4克、味精2克、白砂糖6克、冰糖3克、淀粉2克、植物油40克、香油3克。

2、将葱切段,姜切片,淀粉加水调开,待用。将五花肉的皮刮干净,放入汤锅中煮至七层熟,捞出控干,在肉皮上抹一层酱油,将锅内倒油烧七八成热,把肉皮朝下放,(盖上锅盖,小心别烫到)待肉皮上气泡发黄时捞出,用凉水泡40分钟,至肉皮七皱备用。

3、将肉块捞出,沥干水份,用刀切成0。5厘米薄片(肉皮朝下切),然后皮朝下码入蒸碗内,加入料酒,酱油,盐,味精,葱姜,白酒和糖色(糖色自己炒好的),放入高汤(开水也行),上蒸锅旺火蒸1。5小时。待肉酥烂入味取出。

4、将肉上的葱姜挑出来,肉复扣入大盘子内,将原汤汁调味旺火收浓,勾少许淀粉水浇在扣肉上即可。
