手拉面做法窍门

1、材料:精粉2500克、水1500克、碱面25克、盐少许。

2、将面粉和盐面一并放入面盆,一手倒水一手和面,打成穗子,使面粉与水全部掺合后揉光成团,再用双手蘸水将面搋匀,搋到盆净面光,不粘手为止。用净布盖上饧约半小时。

3、将碱面用水100克化开成碱水。

4、面饧好后,取l/2面团用双手蘸抹碱水搓成长条,两手各抻面的一端,提离案板,慢慢溜条,即上下晃长,两手合拢旋成麻花形,这样反复晃动六七次后,当粗细均匀时放在案板上撒上干面扑滚匀后手提两端,离案甩成长条,再放在案板上,去掉两头成对折两条,一手捏住两个端头,另一手的四指套在两根面条的另一端,悬空拿起,两手同时用力抻拉,并上下抖动,反复拉六七次。边拉边滚面扑,将面拉成细香柱粗的条(64根),下开水锅。下锅时左手执两端面头,右手将面均匀地撒在锅内,随后将右手搭在面头端,左手揪断面头,撒入锅内即成。
