1、原材料预备处理:挑选新鮮海螃蟹为原材料,以9~11月的蟹为上等。打捞后,立即生产加工解决。用冷水清洗后,去除蟹壳和胃囊,沥去水份。去鳃,再用冷水洗去细沙、废弃物、残渣等。

2、捣烂:将去壳的蟹放置桶中,捣烂蟹体,愈碎愈好,便于加快发醇完善。

3、腌渍发醇:添加25~30%的食用盐,拌和混和匀称,倒进发醇器皿,卡紧抹平表层,防止酱色发黑。经10~20天,腥味儿慢慢降低,则发醇完善。

4、储藏:蟹酱在腌渍发醇和储藏全过程中,不可以盖上与出晒,以防造成掉色。丧失其原来红黄色的颜色。
