香椿好吃,但是食用不当也可能会中毒。因为香椿含有较多硝酸盐和亚硝酸盐,可能会在体内形成致癌物。而用水焯烫香椿1分钟左右就可以除去2/3以上的亚硝酸盐和硝酸盐。因此,烹调香椿前都要焯烫一下。而香椿的香气主要来自不溶于水的香精油,所以焯烫并不会影响菜品的风味。
