去除发酵后的面粉的酸味的方法是准备一只碗,放入一勺食用碱,再用适当的盐水把食用碱融化掉,备用,手上蘸着食用碱水反复揉面,要充分揉匀,揉搓到酸味消失。酸味消失以后,还要继续用食用碱,要充分将整个面团都蘸上食用碱。

发酵后的面粉产生酸味的原因是:酵母发酵过程中会产生有机酸,要是发酵的时间越来越长其有机酸越多,有机酸到达一定程度时候,面团就会带有明显酸味。
