牛奶加热到100度左右时,乳糖开始分解,但是牛奶不宜久煮或加热次数过多。牛奶在加热时要起一系列的变化,当煮沸后再继续加热,奶中的乳糖开始焦化,并逐渐分解为乳酸和少量的甲酸,维生素也被破坏,甚至使色、香、味都明显下降。所以热奶以刚沸为度,不宜久煮。
