盐焗鸡爪的教程

1、鸡爪12只、姜片、花椒粒、葱段。调料:盐焗鸡粉30-35g、料酒、纯香麻油

2、浸泡:花椒水中加入拍碎的葱段、姜片以及料酒,将买回的鸡爪冲洗后剪去指甲,放入浸泡2-3个钟备用;将浸泡好的鸡爪再次搓洗干净,特别是爪心黄色的茧皮要撕干净。(浸泡好的鸡爪茧皮轻轻一撕便可)

3、氽水:锅内坐水,放入姜片、葱段及料酒煮开,将浸泡好的鸡爪放到沸水锅中氽烫去除腥臊味;

4、冲泡:将氽烫后好的鸡爪捞出,用流动水冲洗干净沥干水分备用;

5、腌制:将盐焗鸡粉用纯香麻油调成糊状,倒入鸡爪中拌匀备用;

6、将鸡爪装入保鲜袋中搓揉按摩,用密封夹封口,放入冰箱冷藏腌制过夜;

7、将蒸笼用锡纸铺底备用;蒸锅坐水煮开,将腌制好的鸡爪放入蒸笼中,加盖旺火足汽蒸制。(约15分钟)

8、将蒸笼取出,直接将鸡爪连同铺底的锡纸一同取出移至烤盘内,放入200℃预热好的烤箱内,烤至表皮干爽焦香即可取出(约5-8分钟)。
